If you want to walk into a restaurant multiple times and experience a new cuisine and new decor each time, What Happens When is the place for you. The creation of Dovetail chef John Fraser. What Happens When opened on January 25th in Manhattan with a nine month lease, changing themes each month. With each cuisine change will come an entirely new decor. The restaurant is open Tuesday through Sundays 5:30-11pm with a $58 prix fixe meal. The drinks are grab what you can as the bartender roams the restaurant with a bar cart, so you never know what will be coming your way. I am really excited by this “never know what you’re going to get” attitude as it keeps your dinner whimsical and keeps the diner on their toes.
With the low budget this restaurant started with, Chef John Fraser bore half the cost and the other half was raised through Kickstarter. This leaves approximately $2300 per makeover according to Interior Design magazine. Not alot when you are trying to create something jaw-dropping. But I think designers Elle Kunnos de Voss, Felix de Voss, and Nadia Tolstoy of The Metrics have been doing a superb job so far.
